But it was in 1973 that the vision truly blossomed with the opening of Las Casuelas Nuevas in Rancho Mirage. This wasn’t just a restaurant—it was the first Spanish Colonial hacienda-style restaurant in the nation. Designed by renowned architect Arthur Valdes, the building itself is a masterpiece, constructed with handmade bricks, roof tiles, and wrought iron railings, all carefully sourced from Mexico. Every detail was crafted to honor the Delgado family’s heritage—and it shows.
