from Florencio’s grandmother, Maria Fajardo Delgado, of Mazatlán. Sixty-five years later, Maria’s Sinaloan-inspired dishes and the Delgado family name live on at multiple restaurants throughout the Coachella Valley, all operated by Florencio and Mary’s grandchildren.
